I think the powers that be may have actually answered one of the most polarizing aspects of the last film -- the brewery. If you recall, when Spock was observing the security images of Kirk and Scotty, the screen was labelled "water flow" section, or something to that effect. In essence, there is a good possibility that most of engineering we saw in the last film was the ship's coolant areas.

When he says "You'll see more", I think he means that we might actually see the REAL engineering room now. The room all previous ships have had, existed in the last film theoritcally, but was unseen -- until now. I have always said they could handle it this way, it looks as if it might be the case. Fingers crossed!
